Welcome to Vingrau, my small village near Perpignan, Roussillon, in the south of France, Catalan country.
All French people, especially those of us in southern France, are famous for enjoying a good meal, and we enjoy it even more when we share it with good friends, beginning with a delicious aperitif and a drink before lunch or dinner.
I remember, as a young boy, my parents often invited friends to our dinner table, where my mother always served home cooked meals prepared with fruits and vegetables from our garden.
Now, 40 years later, I have rediscovered some of these old, gourmet recipes for light, spicy, delicious foods from my childhood and I want to share them with you. These are all prepared with fresh vegetables (tomatoes, onions, eggplant, fennel), slow cooked at low temperatures with the best olive oil and seasoned with herbs and sweet spices such as basil, thyme, clove or honey. Then small amounts of finely chopped almonds or hazelnuts are added for a finishing touch.
These recipes capture the sunshine and warmth of southern France in a jar, and are delicious spread on toast or grilled bread, to be shared with family and friends, together with a bottle of Roussillon wine or one of our famous Natural Sweet Wines Muscat de Rivesaltes, Maury or Banyuls).
